How to sharpen a Ham knife

The knife used in slicing ham is fundamental to the process.  It is absolutely essential that the blade of the knife be perfectly sharpened so that the slices of ham are of the appropriate thickness.  The most common metal used in making Ham knives is stainless steel, a lasting and flexible metal, but which dulls easily.  For this reason,  it is important to sharpen the Ham knife with a knife sharpener every time one slices ham.

To sharpen the knife, the widest part of the blade should be placed on the upper part of the sharpener and slid down to the bottom so that the whole blade passes over the file.  This movement is repeated with the other side of the blade, repeating the process until the knife is sharp enough.

Afterwards, it is recommended that you run a clean cloth over the knife to remove impurities from the blade.
