Conserving hams and shoulders
Conserving hams and shoulders is not difficult. One must follow these simple steps to enjoy the product in optimum conditions:
- Completely unwrap the ham once you have received it.
- Hang the ham up and let it breathe.
- Store in a dry, cool place between 18º-22º and a level of humidity no higher than 65%.
- Once a part of the ham has been sliced, the area must be covered by fine slices of fat, as well as a tea towel for better protection.
To preserve the ham for future use

When you first cut into the ham, slice and wrap in saran wrap one or more long, wide pieces of fat from the ham (Figure 1) for future use.
- At the end of the day, unwrap the slices of fat and place them over the exposed area of the ham. Press them in firmly with your finger so they stick to the ham. (Figure 2)
- Cover the ham with a tea towel. (Figure 3)
