Its ecosystem was declared a Biosphere Reserve by UNESCO at its meeting held in Paris in October 2006. A place where time

The silent wait inside our cellars instils it with its unmistakable
character. To ensure the best possible degree of ageing for each piece, our Technical Department evaluates and rates over 25 different parameters.
Jamón cured in the pure air of the Sierra de Francia, the perfect microclimate which allows
for a much slower curing process than in any other place, giving our products a Flavour, Aroma and
Texture which are truly exceptional.

To make sure it ages in the best possible manner.
Our curing process is carried out in natural drying chambers and cellars
which allow us to control the air’s temperature and humidity at all times and recreates
the microclimate in the region
